This is a recipe Esther submitted several years ago and it has always been one of my favorites. It is in the FITera cookbook called 500+ Delicious Fat-Burning Recipes
Fat Burning Soup

Recipe contributes primarily fibrous carbs. Servings: 8
In a large saucepan, combine the caulifower, celery, carrots, bell pepper and onions. Add the broth, coriander, cumin and garlic. (If necessary, add just enough water to cover the vegetables). Bring to a boil over high heat; cover, then reduce heat to medium-low and cook gently for 10 to 15 minutes, or until the vegetables are tender.
Add the tomatoes, lemon juice, spinach and cilantro; return to a boil over high
Serving size: 10 ounces Prep Time: 15-20 minutes Cook Time: 20-25 minutes
1 medium head caulifower (see Notes) trimmed, separated into small orets 2 ribs celery thinly sliced
3 large carrots well-scrubbed, then diced or thinly sliced
1 large bell pepper deseeded, then chopped
1 large onion chopped
1 pint fat-free vegetable or chicken stock
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 teaspoon garlic powder
1 (15-ounce) can diced tomatoes
2 tablespoons lemon (or lime) juice
4 ounces spinach leaves (see Notes) well-rinsed 1/4 cup fresh cilantro (coriander) chopped 1/4 teaspoon cayenne pepper
heat, then reduce the heat to medium-low and continue cooking gently for 5 more minutes, or until the spinach is tender, but still bright green. Season to taste with cayenne pepper.
Serve hot or refrigerate in an airtight container until needed.

The caulifower may be replaced with 1 large head of broccoli; spinach may be replaced by an equal amount of shredded cabbage.
