I need to finish prep this morning: making some hard boiled eggs, preparing some celery, and pre-cooking some chicken breast. I made the blueberry oat bars yesterday to have for breakfasts and snacks this week. They are so good. My granddaughters, 8 and 5, will be staying with us from Wednesday evening through Saturday morning, so I’ll need to prep a little differently—but not completely differently—for them. I am grateful that none of my grandkids are picky eaters. I’ve promised them a picnic at one of our parks, so I’ll try to do something healthy and creative for that event.
I was planning a walk for this morning, but it is raining, and looks to last for a while, so I’ll ride bike to my exercise class this afternoon instead.
