Challenge Part 1. A favorite healthy recipe I enjoy eating

(Serve over Ideal Starchy Carb brown rice or Basmati rice)

Ingredients

  • 4 teaspoons vegetable oil
  • 4 cups mixed vegetables I used peppers and broccoli
  • 3/4 pound shrimp peeled & deveined
  • 2 cloves of garlic minced
  • 1/2 teaspoon ginger
  • green onion and sesame seeds for garnish optional
Sauce
  • 1/2 cup chicken broth or water
  • 1 tablespoons soy sauce
  • 2 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch

Instructions

  1. Whisk together sauce ingredients and set aside.

  2. Heat 2 teaspoons oil over medium heat in a wok or frying pan. Add shrimp, salt and pepper. Cook just until shrimp turns pink, about 2-3 minutes. Remove shrimp from the pan and set aside.

  3. Heat remaining 2 teaspoons vegetable oil over medium high heat. Add the vegetables and cook until tender crisp, about 3-4 minutes. Add the garlic and ginger
