Years of athletics, an ACL tear/injury, surgeries and carrying extra weight have been hard on my left knee, and I am really feeling it these days. Today my exercise class was tough, especially the lunges and squats. I do not jump anymore, nor do I partake in any high impact activities, and still it aches. It’s tough to admit that I now have to adjust some exercises (squats and lunges in particular) that I’ve loved to do before. I guess I’ll just have to do more bike riding—it’s my favorite activity anyway.

Finally got some prep done—having green lettuce salads for lunches this week, with tomatoes, and cottage cheese or tuna as protein sources. I’ll round out my lunches with an apple or raspberries from our friends’ raspberry patch. Dinners will be either baked chicken and steamed veggies, and I’ll be making some cauliflower lasagna on Tuesday, so that will cover a couple of evening meals as well. Breakfast will be oatmeal with almonds and blueberries, or eggs on an English muffin.

Wishing everyone a safe and healthy week.
