Today was an odd day. My husband began feeling ill last night, and today I have felt a bit under the weather. Fortunately, I feel ok tonight and Paul is feeling a little better. Once again, I only ate three meals today but I did eat a veggie at each meal.
Meal 1- I cooked some spinach & Kale first, added 2 eggs, a little water salt & pepper which I microwaved in a cup sprayed with vegetable oil. I was experimenting, and it came out like a muffin which I ate with a homemade salsa and three grape tomatoes.
Meal 2- Plain popcorn and celery sticks dipped in peanut butter.
Meal 3- One half piece of Rosemary Stuffed Chicken (which was stuffed with feta cheese), asparagus, broccoli and carrots, and a salad consisting of a mix of romaine, kale, beets, peas and beets and sunflower seeds. I enjoy eating veggies plain, so I had no dressing
