1/4 cup almond or coconut flour
1/4 cup vanilla protein powder
1/2 cup arrowroot starch
1 cup organic coconut milk almond milk
1/4 teaspoon salt
1/2 teaspoon vanilla extract
2 tablespoons coconut oil

1. Combine all of the ingredients in a blender and mix until smooth. Refrigerate for 15 minutes.
2. Heat a non-stick pan over low-medium heat. Pour 1/4 cup of the batter onto the griddle for each crepe. Tilt the pan with a circular motion so the batter coats the surface evenly.
3. Cook the crepe until the bottom is light brown. Turn with a spatula and cook the other side until cooked through and light brown.
4. Repeat for all 8 crepes and serve warm with desired toppings (greek yogurt, peanut butter, fruit, a little honey, etc).
