This is a delicious recipe that's loaded with nutrients and very low in calories. Just be sure to add a protein source with it, such as scrambled eggs or cottage cheese.
4 cups cooked and shredded spaghetti squash (about 1 squash)
1 tablespoon olive or avocado oil
Try mixing in veggies too, like onions, mushrooms, and bell peppers.
1. Heat oil in a large non-stick skillet over medium heat.
2. Press the water out of the squished and shredded squash with paper towels.
3. Mix in egg and add to the warmed skillet and “scramble” for 5-10 minutes, until golden brown. Let cool and enjoy!
