1/2 cup cashews
1/4 cup old fashioned oats or almond flour
2 tablespoons honey or agave nectar
1/2 teaspoon vanilla extract
1/4 cup dark chocolate chips

Try storing these in the freezer. Even immediately out of the freezer, they're edible and a great on-the-go snack.

Directions

1. Process the cashews and oats together in a food processor until there are no big pieces left.

2. Add in the honey and the vanilla extract and pulse briefly to mix together. Stir in the chocolate chips to combine.

3. Scoop out the mixture with a spoon and roll into small balls by hand.

4. Store in the refrigerator or freezer in an air tight container.
