- 1 ½ cups raw almonds

- ¼ cup chocolate protein powder
- ½ teaspoon vanilla extract

For the frosting:
- 8 oz greek yogurt cream cheese
- 5 tablespoons maple syrup
- ½ teaspoon vanilla extract

You can use peanuts, walnuts, or cashews instead of almonds if you'd like.


1. Put all cookie ingredients into a food processor and process until well-mixed.

2. To make the frosting, whip ingredients with an electric mixer until smooth.

3. Roll the cookies between two pieces of parchment paper to ¼-inch thickness. Using a round cookie cutter, cut rounds and place on a cookie sheet or platter and place in the refrigerator to chill for 20-30 minutes.

4. Once the cookies have chilled, remove from the fridge and place about ½ tablespoon on one cookie and place the other cookie on top. Enjoy!
