Ingredients

2 cups quinoa, cooked
1/2 cup peanut butter
1/4 cup honey or maple syrup
2 tablespoons coconut oil
1 tablespoon vanilla extract
1/4 teaspoon salt
1/4 cup protein powder
1/4 cup shredded coconut
1/3 cup dark chocolate chips

Notes

You can use honey instead or maple syrup or butter instead of coconut oil!

Directions

1. Over low heat, stir together peanut butter, honey, coconut oil, vanilla, and salt until smooth and the coconut oil melts.

2. Remove from heat, then stir in the protein powder, coconut, and quinoa until combined. Let the mixture sit off heat while you line a large baking sheet with parchment paper.

3. Once cookie dough has cooled to room temperature, stir the chocolate chips until evenly combined. Scoop the cookie dough onto the baking sheet, flatten slightly into a cookie shape, then place in the refrigerator or freezer until firm. Enjoy!
